We are so lucky to enjoy an array of nice entrees, sides, and salads for lunch when we are at school. Since our school experience has been altered significantly these past few weeks, it can be easy to be at a loss for what to prepare for ourselves for lunch. I, however, have found myself preparing one recipe regularly for lunch: avocado toast.
It is important to maintain a healthy diet during this time of great change and the need for health and immunity. Avocado toast is a very simple entree that does not require a great deal of time or ingredients, but it serves as a very nutritious and tasty lunch option. Avocados are full of healthy fats and vitamins C, E, K, and B-6.
Personally, I love to toast my bread, make an egg, and prepare half an avocado as my base. I will add spices, such as garlic and onion powder, and pepper to my egg and to the avocado to give it some flavor. You can also add tomatoes and additional vegetables to your toast. It is fun to get creative with leftovers and see what you can add to your toast. I will occasionally add chickpeas and sweet potatoes to my avocado toast for an additional touch.
It is also important to eat antioxidants during this time, so adding a side of fruit or berries is great as well. Antioxidants are known to fight free radicals in your body that are connected to many illnesses such as cancer, diabetes, and heart diseases, according to Healthline.com. Immunity is definitely a focus at this time, so adding foods that can aid your body’s immunity is a great option. Being creative and making your plate as colorful as possible can be a fun task at mealtime that we are now able to embrace more often!
